Since a while we are selecting some producers of natural wines. In the Alsace we selected from Domaine Paul Wyman Riesling, Pinot Noir and Gewurztraminer, all fermeted naturally, giving it a specific flavour. This a part of our “Spontan Fridge”, witch will be ready in 09.2023 and will offer a selection of spontaneus fermented beers and natural wines.

In a world saturated with mass-produced beverages and synthetic flavors, there is a growing movement that seeks to reconnect us with the authenticity and purity of the past. Enter natural wine, a trend that is captivating the palates of wine enthusiasts and gaining recognition as more than just a passing fad. Natural wine represents a return to the roots of winemaking, embracing the craftsmanship and character that define this age-old tradition.
What sets natural wine apart from its conventional counterparts? At its core, natural wine is an ode to simplicity and respect for the natural elements involved in winemaking. From the vineyard to the bottle, every step is approached with a deep commitment to working in harmony with nature rather than against it.
Unlike industrially produced wines that rely on chemical intervention, natural winemakers adopt a hands-off approach. They allow the grapes to express themselves fully, eschewing the use of pesticides, herbicides, and artificial fertilizers. This commitment to organic and biodynamic viticulture means that every sip of natural wine is a testament to the winemaker's dedication to preserving the environment and minimizing their ecological footprint.
The journey of natural wine continues in the cellar, where winemakers embrace low intervention techniques. Fermentation occurs naturally, without the addition of commercial yeast or excessive sulfites. Embracing wild yeasts allows each bottle to showcase the distinct characteristics of the vineyard, creating a diverse and ever-evolving tapestry of flavors and aromas.
Natural winemakers also prioritize minimal filtration and clarification, opting for a more rustic and unadulterated profile. This approach fosters a more vibrant and alive wine, brimming with tannins, acidity, and a distinct sense of place. Each glass becomes a portal to the vineyard, offering a taste of the soil, climate, and unique terroir that defines the wine's origin.
But what truly captivates the natural wine enthusiast is its inherent unpredictability. Natural wines may exhibit a wider range of aromas and flavors compared to their conventionally produced counterparts. From funky and earthy to floral and fruity, the possibilities are as vast as the winemaker's creativity and the complexities of nature. Every bottle becomes an adventure, a discovery of new flavors and a reconnection to the rich tapestry of the winemaking heritage.
